
I love codfish and I normally have it once a week. The ingredients and the recipe tend to be the same most of the time.
So let's do this:
Boil 8 to 10 potatoes sliced into cubes until they get tender. Put salt as you like.
Slice all the following ingredients into small pieces and place them into a deep frying pan:
- Two big onions
- 4 garlic cloves
- Half of a small red pepper
- Half of a chorizo or Bacon
- Coriander
- Black pepper
- Olive Oil
After 5 minutes add the codfish (I used the frozen Codfish Portions from Sainsburys). Make sure you shred them while your mixing them with the mixture mentioned above. If you need, add some more olive oil.
- 2 or 3 small spoons of vinegar.
After draining the potatoes, add them to the mixture too and let it slightly brown, stirring it with a wooden spoon from time to time for about 15 minutes.
- A little bit of more salt if you need.
By the end, add some black olives
